Tropical Oat Parfait has been on the menu rotation for several months and it has quickly become my most requested recipe. After several versions with different fruit ratios, here is one of our new favorite breakfast starters.
Tropical Oats:
1 cup rolled oats
1/4 cup shredded coconut
1 1/2 Tbs chia seed
pinch salt
1/2 mashed ripe banana
1/4 cup crushed pineapple
2 Tbs juice from the crushed pineapple
1 1/4 cup coconut milk
In a large bowl mix all dry ingredients together. Add wet ingredients and mix until well combined. Cover & let sit overnight in fridge.
Layer with your choice of yogurt, mousse, and fruit and serve. The photo shows oats layered with coconut creme yogurt, papaya and kiwi. Enjoy!!
